If you’re doing a 1:1:1 or even 1:1:.75 feeding ratio with your sourdough starter and arent seeing strength in your bread or a developed gluten network, it might be time to try this ratio: I do 1/2 cup starter to 1 cup flour to 2/3 cup water or 138 g starter to 120 g of flour to 236 grams water (I think that’s the right conversion 😅) when my starter needs some love. If your starter smells super acetone or doesn’t have a lot of strength, he/she is most likely underfed. So try this out and see if
