I blanched them, brined them (no cure) dried, cold smoked with alder for 4h. Left two days in the fridge then pressure canned. Taste great, not too smoky, texture is perfect.

Generally they come from Eastpoint, Fl. which is near Apalachicola. Best oysters i've had from anywhere. I love canned smoked oysters but I don't dig that they come from Thailand and places like that.

I used slightly smaller oysters, so had to cut down the cooking time a bit (maybe 1:15-1:30 or so total), and take them off sort of one by one as the smaller ones got done all the way up to the bigger ones.
