Darth Nihilus needs to feed on Life to sustain himself, ideally from Force users who provide the most sustenance. So to defeat him requires someone strong strong enough in the Force to withstand him (Anakin) or someone who makes him exhert more Force Energy than he consumes. Of all people, Nihilus seemed a weird choice for that. He wouldn't care. He's not really a Sith. KotOR 2 makes that pretty clear. I think that's why he's not been referenced in more things, he really isn't that interesting outside of being a dark mirror for the Exile. Everything important about him happens in KotOR 2.
