Notes: This was a boneless ribeye roast from Costco, just shy of 12lbs. I rubbed it down with salt and pepper and let it rest uncovered on a rack in the fridge for around 30 hours. I rubbed it with herbs de provence and let it rest around 45min out of the fridge before going in the oven at 250°. It took about 4.5 hours to come to 137°.

Just because it is a roast and not a flat steak, you don’t have to worry about additional cooking during the sear. That being said, I’d cook it for 24 hours, water bath in the sink, 500 degree oven for a crust. Edit: Whoops! My mistake.
