2020年12月31日 · I am trying to combine Alton Brown's standing rib and one from food and wine. Anyway Alton's recipe you cook the roast in the oven low at 250 first with just salt and pepper for a couple hours. Then you take it out and use the juices to make yorkshire pudding to go with it.

2022年12月25日 · Just made an amazing beef hash with prime rib fat. Fried onions and potatoes, added some left over beef trimming. Some of the rendered fat to sauté biscuits. Nothing like beef fat to get your day started right.

I'm following Alton Brown's latest standing rib roast recipe and before cooking, he recommended covering the roast with cheese cloth, and allowing it to sit in your fridge for a week. My roast is on day 6 and some of the fat on the outside of the roast is becoming very dark; almost black. I've been changing the cheese cloth daily.
