I used this recipe as a base for the filling, for “Chicken-style vegan pot pie (with cashew sauce)” from Cadryskitchen.com, but heavily modified it with the cooking techniques from Cook’s Illustrated, and added potato and mushroom, and used soy curls instead of seitan.

2022年4月4日 · Here's my hack: I look up chicken pot pie recipes from omni websites and just veganize it. Use veggie broth, use soy curls or tofu instead of chicken, and steer clear of "shortcut" recipes that use cream of chicken or cream of mushroom canned soup. Some ready made pie crusts are accidentally vegan - check the ingredients list and look for lard.

Deborah Madison's Vegetarian Cooking for Everyone has some great stew recipes (and is an all around treasure of a cookbook) if you ever get a chance to check it out.
