I pretty sure I see a truffle in the screenshot hidden under the grass. Keep the kid pen entirely empty so you can see the truffle more clear and just feed the pigs hay from the silo instead. It’ll be easier to collect truffles that way. You can also make the pig pen area smaller to make it easier to find and collect all the truffles

Make a bucket of mud. Water bucket, dirt block and a piece of the resource you are going for. Right click the bucket on a pig. Put the pig on the correct target block and it will "unearth" a truffle. You can use a miner from cyclic I believe to harvest the truffle. The pig will make another and do forth. Craft 4 truffles to make the resource.
