2022年10月20日 · It is important to note, this calls for a 3 day dry brine. That is the flavor. It says 5 minute prep time: realistically it should be 3 days + 5 minutes. I wouldn’t dry brine longer, shorter is ok just less flavor will permeate the bird. I have only done this with a 3 day brine on a big bird, but it is the same as dry aging any meat.
