There should be no problem with this provided they are confident swimmers because you will be a few hundred metres off shore and the boats drop swimmers in front of the shark then move out of the way. The sharks can move quite fast plus they need to be happy to float in the water until the boat returns to pick everyone up. The other thing to be aware about is that the trip takes 3 hrs and there may be a bit of waiting whilst the crew search for the sharks - not ideal for kids that get bored and restless after two minutes without entertainment! Having said this, it is a once in a lifetime opportunity for both you and the children - we took our girls into the Alaskan wilderness on a bear watching trip and had similar worries, but they were enthralled by the trip and still speak about it 15 years later!
