Some photos on the website show people sitting in/on the planes & vehicles. Are there some there that visitors are actually allowed to touch and/or experience sitting in, especially if they behave appropriately?

I visited on a weekday and a few planes had outside stairs one could mount. Touching and entering planes was not encouraged. They did mention some special events on weekends where vehicles are actually used. Maybe try checking ahead? One auto was available for guests to sit in if you asked for a volunteer to take photos with your device.
